Our vineyards are located at 900 metres altitude, in clayey-calcareous lands with an orientation and slight slope towards the north-west.
The Sinarcas's altitude and cold climate provide a fluctuation of temperature between night and day that give our grapes acidity and
bouquet. Its orientation and espaliers provides a perfectly isolated environment that guarantees an ideal ripening.
We are convinced
that quality wines are produced in the vineyard, and our objetive is to make the most from the earth. For this purpose we carry out
daily control in the vineyards, with the help an agricultural expert that has the support of César Salón, the family's patriarch,
who has dedicated more than forty years of his life to the wine cultivation.
Our philosophy is based on the use of low-intensity
productions. To do this, we do high density plantation, weak rootstocks and use low-vigorous clones. We use a mixture of non-working
practices an it's 10 years since we last put fertilizer on our fields, all these with the intention that our vineyards acquire the
less possible vigour.
Later, and just before the beginning of ripening, we clear the bunches of grapes leaving each
stock with the suitable production, with the grapes perfectly drawn, distributed uniformly along the cord obtaining the maximum ventilation..
This
practice, along with the stripping off of the leaves, a task that we do before the harvest, (which provides more sunshine to the bunch
of grapes) and the exceptional microclimate of Sinarcas, make it possible to give the vineyard the minimum treatment and as a consequence,
we could practically consider our grapes as organically grown.
